Chocolate Amaretto Cupcakes
These Chocolate Amaretto Cupcakes are perfect for any occasion. You can find the easy to follow recipe below.
To make the cakes:
- 100g butter
- 100g caster sugar
- 1 tbsp amaretto or almond essence
- 2 large eggs
- 90g plain flour
- 3 tbsp cocoa
- 1 tsp baking powder
To make the chocolate amaretto buttercream:
- 150g butter
- 290g icing sugar
- 3 tbsp cocoa
- 1 tbsp amaretto
Method
- Pre-heat the oven to 180c and line a cupcake tray with 9 cupcake cases.
- Cream the butter, amaretto and sugar together until smooth.
- Beat in the eggs one at a time until combined fully.
- Sieve in the flour, cocoa and baking powder and combine.
- Divide between 9 cupcake cases.
- Bake for 8 to 10 minutes until firm to touch.
- Move to a wire cooling rack to cool.
To make the buttercream:
- Beat the butter with the amaretto until soft and creamy.
- Sieve and beat in the cocoa and icing sugar, 1/4 at a time.
- Once fully combined, pipe onto cooled cupcakes in your desired way.
